Or, certaines personnes ont du mal à l&amp;#39;absorber par défaut d&amp;#39;enzymes permettant de l&amp;#39;assimiler. La pomme de terre qui dispose, elle, de cette enzyme qui manque aux topinambours est donc la bienvenue dans l&amp;#39;eau de cuisson.&lt;br /&gt;&lt;br /&gt;Certains préfèrent introduire du bicarbonate de soude dans cette eau (1/2 cuillère à café par 2 litres).
